On our way to Mammoth Cave, we took the scenic route because it was only 20 minutes longer. Actually, the real reason we took the longer route was to go through Albany, KY. "Why Albany?" you ask. Well, according to Taco Maker's website, it is the closest location to Knoxville, and therefore the closest place for Lisa to get a crisp bean burrito, of which she has been deprived for these last 4+ years. As luck would have it, the Taco Maker was just recently converted to a Subway! No burrito for Lisa. (Normally Lisa would pout and pout and pout about this. She loves her crisp bean burritos. She didn't this time and the trip stayed pleasant. Our girl is growing up!)

On the way home, we stopped at the Sgt. Alvin C. York memorial site. He was one of the most famous war heroes of World War I. He turned down millions in endorsements to return to his home in Tennessee. After seeing the world, he knew it would be important for the children in his rural area to get an education so he worked to raise awareness and build educational institutions.
